Fresh Peach Dump Cake – a Recipe

Happy National Peach Month… did you even know it was national peach month? Because I didn’t- even before I made this dessert. I guess its a good month for it because I was craving a peach dessert. How intuitive of me :)

It all started when I went to the farmers market and spotted these amazing peaches. I was originally going to juice them (in my juicer) but like I said, I wanted a cobbler of some sort.

I am also a big fan of dump cake. We grew up eating dump cake in our family so I thought our recipe was the only version; canned cherries, pineapple and nuts. With the birth of Pinterest I saw a recipe for pumpkin dump cake and almost died! So I figure we can pretty much dump anything in and call it dump cake.

I wanted to add something else and I had a few plums so I threw those in too.

The beauty of a dump cake is that you can “dump” in whatever you want, throw a box of yellow cake mix on top, add some butter and bake.

I used:
4 fresh peaches and 2 fresh plums

cinnamon and nutmeg

a box of yellow cake mix on top

and butter

Fresh Peach Dump Cake
4-6 fresh peaches chopped
2-3 fresh plums chopped
1/2 tbsp cinnamon
1/2 tsp nutmeg
1 box yellow cake mix
3/4 stick butter
– Preheat to 350
– Mix fresh chopped fruit with spices in the bottom of an oven safe dish
– Sprinkle cake mix over the top
– Slice butter and place on top
– Bake for 45 mins to 1 hr @350

Blueberry Mascarpone Whip Trifle

Turns out, I really like to say “Mascarpone”. Maybe that is part of the reason I made this dessert? That and it’s really, really pretty, and I love trifles.

I found this original recipe on Pinterest. I have started using Pinterest as my personal cookbook. I jumped on the pinning bandwagon early and while it holds a special place in my heart, some of the DIY projects are overdone. Like everyone has seen it. But the recipes keep me coming back. 
I made this for my Dad’s birthday last weekend and it was a really big hit! The original pin comes from a pretty blog called My Baking Addiction, you can see the recipe HERE. She serves hers in individual jars which is so precious. But I like to do as few dishes as possible :) So trifle dish it is.

Ingredients:
-pound cake
-blueberry pie filling
-heavy whipping cream
-mascarpone cheese
-lemons
-vanilla
-sugar
I “TaylorMade” a few changes…
Her original recipe has an option for making the Blueberry Sauce from scratch but I found organic Blueberry pie filling and it was all natural so I figured it wasn’t too far off. Also, I couldn’t find pound cake at the store but I could find something called “Sour Cream Pudding Cake”… Ohhh Kay! And like I said, I did my dessert in a trifle dish so I have more layers too.

Margarita Pie

I had you at Margarita right? If you know me at all you know how I feel about Margaritas.  Not only do I love Margaritas… I also love anything made with Greek Yogurt. So, I whipped up a pie. The recipe is from Oikos (the Greek Yogurt lid), I just added some Triple Sec :) 

Ingredients:

1 graham cracker crust
8 oz low fat cream cheese
1 cup  Vanilla Greek Yogurt
1/4 cup Sugar
1/4 cup Margarita Mix
3 Tbs. Fresh Squeezed Lime Juice
1 Tbs. Triple Sec Liqueur 
 

Beat cream cheese until smooth. Add sugar, lime juice, margarita mix and Triple Sec and stir. Then, fold in the yogurt. Pour into a pie crust and freeze a few hours or until firm. I added sliced limes on top for funsies.

On the topic of cold food… anyone have any good recipes for “cold” dinners. I can’t think of anything to make lately because it is so hot here that a hot dinner sounds… hot. All I can think of is Greek Salad which we had tonight by the way. I can’t live of Greek Salad every night… ideas anyone?

Mexican Cheesecake

Disclaimer: do not blame me for how much you like this dessert because it is not low fat!
I like to take Mexican Cheesecake when I go somewhere and I know that I can’t eat more than one piece. In fact no one should even be allowed to have more than one piece because not only is it buttery and flaky, but the cream cheese makes it super rich. (I might know from personal experience that you will not feel good about yourself after two pieces). Anyway, I like it because it is very easy to make and its a crowd pleaser every time.
Ingredients:
2 (8oz) cans of Crescent Rolls
2 (8oz) Blocks of Cream Cheese – softened
2 cups Sugar (missed the cut for the pic?)
2 tsp Vanilla
1/2 cup Melted Butter
Cinnamon
Directions:
Spray a 9×13 pan with Pam and spread one of the cans of crescent rolls on the bottom of the pan.
Mix the 2 blocks of cream cheese, 1 cup of the sugar, and 1 tsp of vanilla until fluffy.
Spread the mixture on top of the crescent roll bottom. Roll out the other can of crescent rolls and place them on top of the other two layers. Press the edges to form a seal.
Melt the butter and remaining 1 cup of sugar together until sugar is dissolved. Add 1 tsp vanilla to the butter/sugar mixture. Pour that Mixture on top of cheesecake. Sprinkle with cinnamon.
Bake at 350 for 30 mins and enjoy
