Chicken Pitas and Tzatziki

Once again, I have another recipe for you from Real Simple. I am pretty much obsessed with their recipes. I like the magazine but I love their recipes. We make something “Real Simple” at least once a week. And this is definitely simple. Here is the link to the recipe online:
Chicken Pitas with Tzatziki
 I usually amend to our liking but I pretty much follow this one exactly. I do add lemon juice to the Tzatziki Sauce. And my pitas have pockets but that is about it. You will love these! 

Chicken Pitas with Tzatziki:
Ingredients:
2 tablespoons olive oil

  • 1 1/2 pounds boneless, skinless chicken thighs (about 8)
  • 1/4 teaspoon cayenne pepper
  • kosher salt and black pepper
  • 1 cup low-fat Greek yogurt
  • 1 cucumber, seeded and grated (about 1 1⁄4 cups)
  • 1/4 cup chopped fresh mint
  • 1/2 small clove garlic, finely chopped
  • 4 flat breads or pocket-less pitas, warmed
  • 1 small romaine heart, leaves torn if large
  • 8 cherry tomatoes, quartered
  • (I add lemon juice)
 
Directions:
  1. Heat the oil in a large skillet over medium-high heat. Season the chicken with the cayenne, ½ teaspoon salt, and ¼ teaspoon black pepper. Cook until cooked through, 6 to 7 minutes per side. Cut into bite-size pieces.
  2. Meanwhile, in a medium bowl, mix together the yogurt, cucumber, mint, garlic, ½ teaspoon salt, and ¼ teaspoon black pepper (and lemon).
  3. Top the flat breads with the romaine, chicken, tomatoes, and tzatziki.
 
It makes a ton of Tzatziki and I always have leftover sauce so we use it as veggie dip for the next few days. So good! Last night I served our pitas with Couscous and Sauteed Garlic Zucchini. Lovely summer meal :)

Mexican Cheesecake

Disclaimer: do not blame me for how much you like this dessert because it is not low fat!
I like to take Mexican Cheesecake when I go somewhere and I know that I can’t eat more than one piece. In fact no one should even be allowed to have more than one piece because not only is it buttery and flaky, but the cream cheese makes it super rich. (I might know from personal experience that you will not feel good about yourself after two pieces). Anyway, I like it because it is very easy to make and its a crowd pleaser every time.
Ingredients:
2 (8oz) cans of Crescent Rolls
2 (8oz) Blocks of Cream Cheese – softened
2 cups Sugar (missed the cut for the pic?)
2 tsp Vanilla
1/2 cup Melted Butter
Cinnamon
Directions:
Spray a 9×13 pan with Pam and spread one of the cans of crescent rolls on the bottom of the pan.
Mix the 2 blocks of cream cheese, 1 cup of the sugar, and 1 tsp of vanilla until fluffy.
Spread the mixture on top of the crescent roll bottom. Roll out the other can of crescent rolls and place them on top of the other two layers. Press the edges to form a seal.
Melt the butter and remaining 1 cup of sugar together until sugar is dissolved. Add 1 tsp vanilla to the butter/sugar mixture. Pour that Mixture on top of cheesecake. Sprinkle with cinnamon.
Bake at 350 for 30 mins and enjoy

Black Bean Salad

Are you feeling springy yet? I sure hope so and if you are I’m jealous because I am feeling summery already and I don’t like it. If you know me, you know that I am extremely hot natured and wear my flip flops all winter long. So, I’m not happy that it has been in the upper 80’s all week, Houston, its April… you are killing me!

What does this ramble have to do with Black Bean Salad? Its hot, and when its hot I like cold food. So I made Black Bean Salad the other night on the side of our Chipotle Pork Tenderloin and Baked Sweet Potatoes. Its simple, healthy, cold and Finn couldn’t stop eating it!

Black Bean Salad:
– 2 cans of Black Beans
– 1 avocado
– cilantro (I love a ton but add as much or as little as you like)
– 4 scallions
– juice from 2 limes
– 2 tablespoons olive oil
– salt to taste

Cobb Salad with Red Wine Vinaigrette

Spring has Sprung so you know what that means… It means it’s only March here in Houston and its in the high 80’s. Yes its true, its hot already! Which makes me want to eat cold things so if you live somewhere that is snowing right now, please excuse my Springy Salad post. You can bookmark this recipe for when you need it!
First of all can I say that I am a sucker for any Vinaigrette so my favorite part of this salad is the dressing. The Cobb Salad is pretty traditional, we used:
Green Leaf Lettuce
Grape Tomatoes
Radishes
Scallions
Grilled Chicken Breasts
Hard Boiled Eggs (which I can never get to look pretty, any tips?)
Avocado
Bacon
Goat Cheese
Carrots
Celery
Just line the ingredients up over the chopped lettuce…
Red Wine Vinaigrette:
1/4 c red wine vinegar
2 tbsp fresh lemon juice
2 tsp sugar
1/4 tsp dry mustard
1 tsp chopped garlic
1/2 c olive oil
