Southwest Chicken Salad & Cilantro Lime Vinaigrette

Y’all, something happened… I found the world’s best salad dressing. I don’t even need to call it a dressing, it can be a dip or you could put it on meat or I might just drink it with a straw. I present: Cilantro Lime Vinaigrette, it’s not my recipe I found it HERE. If you love cilantro half as much as I do then you will love this dressing (seriously cilantro is my favorite food!)

Anyway I found it a few weeks ago and I have made it every week since. To go along with it we made a Southwest Chicken Salad the other night. You know, cause eating dressing with a spoon might be weird so it needed a vehicle.

For the Southwest Chicken Salad:

-marinated grilled chicken

-green leaf lettuce (my personal favorite lettuce)

-celery

-carrots

-green onion

-black beans

-english cucumber

-bell pepper

-avocado

-corn

-cojita cheese

Toss all the ingredients in a bowl and top with the best dressing ever :) Speaking of a bowl, how cute is this one? The nice people at Red Envelope sent it to us because we make a ton of salads at our house! I love the feel of it, its really thick and feels “hearty”… perfect for a chicken salad. I also just love looking at it. Now I need open cabinets because it’s too cute to be behind closed doors. I’m like the mouse from “If You Give a Mouse a Cookie”!

Peach Punch Popsicles

It’s the end of August so you know what that means… Back to School time! I’m having some serious mixed emotions about it this year. My boys are still in a pre-school program that I love and they do to. Last year they went 2 and 3 days but this year they will both be in school 4 days a week. Don’t get me wrong, they need it and I do too, they are starting to get a little stir crazy and we are ready for the routine. But, I have loved this summer and I will never forget the summer baby sister was born and we spent time learning all about our new baby… we are going to miss our crazy boys around the house, it might get too quiet.

I know that one thing will stay the same… the need for an after school snack. My boys always come home so starving! They wear them out at school :) It will be warm here in Texas for a few more months so we love to make homemade popsicles as an after school snack. My secret ingredient? DelMonte fruit squeezers! My kids LOVE them and ask for “squeezers” daily (and because they can’t read yet they don’t know they have hidden vegetables hehe).

These popsicles are so easy that my 3 and 5 year old boys can pretty much make them! Peach happens to be our favorite flavor around here so I picked up the peach mango DelMonte Squeezers from WalMart and a box of the strawberry too. For these Peach Punch Popsicles I used:

about 3/4c 100% real fruit punch

a little fresh squeezed orange juice

And we froze them to perfection :) My oldest son has declared these his new favorite flavor…. they are so, so good!

Fruit squeezers are also an easy and healthy favorite inside their lunches so we stocked up this past weekend! Right now select Walmart Superstores are running a back-to-school photo special. You can bring in or upload any photo and receive a free 5×7 photo. Is anyone else feeling bittersweet about this school year? I know that in no time we will have the hang of it and it will be the new normal but sometimes this growing up thing is hard… especially for moms ;)

White Bean and Avocado Hummus

I love Hummus, a lot. So do the boys… my oldest will eat it with a spoon. But my husband doesn’t. So naturally, I have been on a little mission to make him like hummus. First, I had to figure out what he didn’t like about it. After a lot of talk and tasting, he said it must be the texture because he doesn’t like the texture of chickpeas. Oddly enough I don’t really like chickpeas either. Then my mom mentioned she has been making White Bean Hummus for a while. BINGO people!

I thought I would  even add an avocado for more creaminess. It turned out to be a mix of hummus, bean dip and guacamole all rolled into a rich, smooth concoction that had everyone eating it with spoons :)  The Husband Verdict… he ate a good serving of it! That’s Hummus Progress. Also please someone tell me how to take a good picture of hummus- it’s not a photogenic food…  I promise it’s better than it looks.

White Bean and Avocado Hummus: (kind of based on this recipe)

chopped green onions ( I used 2)
juice of 2 lemons ( I like it very lemony)
2 tablespoons tahini
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon oregano
1 can cannellini beans- rinsed and drained
1 avocado
1 garlic clove, peeled
a little olive oil

Has anyone else tried any good Hummus recipes or “spin-offs” I should know about? That tahini looks like it will last me a while.

Fresh Peach Dump Cake – a Recipe

Happy National Peach Month… did you even know it was national peach month? Because I didn’t- even before I made this dessert. I guess its a good month for it because I was craving a peach dessert. How intuitive of me :)

It all started when I went to the farmers market and spotted these amazing peaches. I was originally going to juice them (in my juicer) but like I said, I wanted a cobbler of some sort.

I am also a big fan of dump cake. We grew up eating dump cake in our family so I thought our recipe was the only version; canned cherries, pineapple and nuts. With the birth of Pinterest I saw a recipe for pumpkin dump cake and almost died! So I figure we can pretty much dump anything in and call it dump cake.

I wanted to add something else and I had a few plums so I threw those in too.

The beauty of a dump cake is that you can “dump” in whatever you want, throw a box of yellow cake mix on top, add some butter and bake.

I used:
4 fresh peaches and 2 fresh plums

cinnamon and nutmeg

and butter

Fresh Peach Dump Cake
4-6 fresh peaches chopped
2-3 fresh plums chopped
1/2 tbsp cinnamon
1/2 tsp nutmeg
1 box yellow cake mix
3/4 stick butter
– Preheat to 350
– Mix fresh chopped fruit with spices in the bottom of an oven safe dish
– Sprinkle cake mix over the top
– Slice butter and place on top
– Bake for 45 mins to 1 hr @350
